Bonfire Soup

We are having a Bonfire Night/Fire fighter theme week.   We had a bonfire soup for lunch one day.

First we made butternut squash soup together.
Recipe:  Chop one onion, sauté with 2 cloves of garlic.  Peel, deseed and chop one large butternut squash, add this to the pot along with about 800ml boiling water and a teaspoon of vegetable bouillon.  Cook until squash is soft.  Puree.

I put some soup into a yellow cup.  I then toasted a slice of bread and cut into strips. I spread red pepper hummus on the top half.  I spread the toast sticks around the cup like a bonfire.  I added some cheese at the base of the cup.

Very simple and fun.
